Santa, I’ve been good this year, I swear!

I can’t believe that Christmas is less than one week away! While most of us have been very good pretty good this year, it doesn’t hurt to offer up a little last minute bribe to Old Saint Nick! While I don’t like the snowflakes on the ground, I do like these mini snowflake pies!

Here’s a great, simple recipe that you can get your little ones to help you make. It’s super-easy, contains few ingredients, is quick to make and looks cute. The recipe is also very easy to double  

Leave these out for Santa, along with some milk (don’t forget the carrots for the reindeer!). These will ensure that you stay on the nice list!

Prep time: 10 minutes; Cook Time: 10 – 12 minutes; Serves: 7 mini snowflake pies

What you need:

  • 1 pie crust dough (homemade or store bought – we used one Pillsbury Pie Crust)
  • 1/3 cup blueberry pie filling (we used ED Smith)
  • 1/2 tsp Grand Marnier (optional, but encouraged)
  • 1/2 tsp lemon zest
  • 1/2 tsp fresh lemon juice
  • pinch salt
  • icing sugar
  • fresh blueberries (for garnish)

What you do:

  • Preheat your oven to 450ºF
  • Line your baking sheet with parchment paper
  • Roll out (or unwrap) your pie crust dough
  • Using a cookie cutter cut into 14 stars (or whatever shape you are using) – you may have to re-roll the dough for the last few

  • Mix together the blueberry pie filling, lemon juice, lemon zest, Grand Marnier and salt

  • On your parchment-lined baking sheet, place 7 stars
  • Add 1 tsp of the blueberry mix to the centre of the stars

  • Cover with the other pie dough stars

  • Gently press the edges together and then push down using the tines of a fork
  • Bake for 10 – 12 minutes
  • Remove from oven, slide onto a platter
  • Sprinkle blueberries on the platter
  • Dust with icing sugar

A kid friendly recipe. Create these little mini snowflakes pies with your Santa's little helper.
