Banana Coconut Bread

Happy National Banana Bread Day! What? Yes, mark Saturday, February 23, 2019 on your calendars. It’s time to celebrate National Banana Bread Day!

Banana Bread! When the number of bananas I buy exceeds the number of bananas I manage to eat, it’s time to make Banana Bread! To give this recipe a little twist, I added coconut milk and shredded coconut. I love coconut and its addition gives this breakfast bread a little bit more texture and chewiness.

This Coconut Banana Bread is fairly quick to whip together and is a great recipe for breakfast on the go.

(Shh, you don’t have to tell anyone that it’s vegan!)

Prep time:  15 minutes; Cook time: 50 – 60 minutes + 10 minutes cooling time; Serves: 8 – 10

What you need:

  • 3 cups all-purpose flour
  • 3/4 cup maple syrup
  • 1/2 cup brown sugar
  • 2 1/2 tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp nutmeg
  • 1 tsp vanilla
  • 1 tsp salt
  • 4 ripe bananas, mashed
  • 1 cup vegetable oil
  • 1 cup coconut milk
  • 1/2 cup shredded coconut

What you do:

  • Preheat oven to 350°F
  • Grease 8″ x 8″ pan (or 9″ x 5″ loaf pan)
  • In a large bowl, whisk the dry ingredients together: flour, brown sugar, cinnamon, baking powder, baking soda, nutmeg and salt

  • In a second bowl, whisk the wet ingredients: mashed bananas, maple syrup, vanilla, vegetable oil and coconut milk

  • Mix wet mixture into dry mixture until combined

  • Stir in the shredded coconut

  • Fill pan with batter

  • Bake for 50 – 60 minutes, or until the toothpick inserted in the centre comes out clean

  • Let cool on a rack for about 10 minutes before removing

  • Slice!

  • Serve!

  • Enjoy!

  • Give old bananas a second life and enjoy breakfast!

A great recipe for when you have too many ripe bananas on hand. No one has to know that this is vegan.
